It's officially the last day of summer today. Tomorrow ushers in fall.....and I have to admit, I'm excited. Once fall hits............the magic of a season full of holidays, traditions, and family kicks in.
And last night, the weather was just right to re-introduce the flavor of pumpkin. And yes, he is only welcome during the fall and winter months. There's something cozy about him.
A friend of mine told me about a pumpkin and sausage recipe from Rachel Ray, so I was on the hunt to find it.
And I'm so glad I did.

Find the recipe from Rachel Ray here.
The only thing I did differently was substituted the white wine for chicken broth with a tablespoon of white vinegar. (I didn't have any wine, and I read about the broth and vinegar as a substitute online.)
We served this with some squash and it was just perfect. Oh yum.
Be ready for some other fall ideas this week.

Looks way yummy! Thanks!
Yeah for Pumpkin!! I love making things with all sort of squash! I even freeze some so I can have it throughout the year.
I think I need to make some yummy bread just thinking about it. Oh I could have a whole pumpkin themed night! thanks for the new recipe idea!!
Oh yum. It's almost lunch time and your post has made me very hungry! Thanks for sharing the recipe.
I am making lots of yummy noises - so delicious. Thanks for the wine substitute tip - I don't cook with wine either (or in your case whine - LOL) I'll have to make these soon:)
Oooh, thanks Jen. I just fixed that. Though, I'm sure there was a lot of "whine"-ing at my feet while I was cooking that meal. Little ones always seem to need attention while dinner is being prepared. Bless them!! :)
Never heard about broth and vinegar substitute before, thanks for posting that!
Looks great! I pulled out the pumpkin here too yesterday and made some yummy pumpkin bread.
YAY!! I'm glad you tried it...It's SOO YUMMY! Thanks for the tip about substituting wine...I obviously haven't made it yet, and she didn't tell me about it.
oh that sounds and looks sooooo good! thanks for the idea about the chicken broth substitute. I never have chicken broth and never know what to do without it :)
